    We loved the cilantro pesto!! I also used parmesan cheese plus added more garlic and I served it over spagetti squash. I love cilantro and this was a tasty side dish, and I served it with barbequed chicken. Thank you Bobby for another excellent recipe.

    I usually think Bobby Flay's stuff looks amazing. I followed this recipe exactly and felt like it was awful. While I've had worse food, it wasn't very exciting and more than a very small serving nauseated me. My husband could only pick at it. Even the color and appearance was unappetizing. I'm usually a fairly good cook and very much enjoy Giada's or Sandra Lee's recipes. Perhaps I'll try some different stuff from Bobby some time, but all I know was this turned out very disappointing for the time it took.

    We hardly waste food and had to flush most down the toilet...

    The cilantro pesto really wakes up this dish and makes it pop! This recipe instantly became a favorite for the whole family.

    thanks Bobby :
    I love the idea of the Pesto.
    I changed it by subbing Brown Rice for White.
    Reduce the rice to 1 cup.
    used 1 -15oz. can of prepared black beans.
    Still used the liquid from the beans for the rice
    1 15oz can of water with 1 TBLSP of Chicken Bullion
    Changed the cheese in the Pesto to Parmesan.
    reduced the Olive oil in the pesto to 1/2 cup
    Changed the cook time of the rice to about 50 minutes.
    I will try next time with Roasted Pine nuts.

    I got great results...

    I changed the recipe a little. I used instant rice and canned black beans because that's all I had. I also left out the pine nuts and the cheese. It was still very delicious and my picky husband who says he doesn't like beans (even though he's rarely ever eaten them! liked this. I would definitely crave and make this again as an excellent side dish!

    Unfortunately my husband threw out my beans that I was soaking so I had to use canned beans. I still used the liquid from the can (mixed with water to cook the rice in and it still came out delicious! My mother-in-law loved it so much she called and asked me for the recipe! Strong cilantro flavor, so if you don't like cilantro decrase the pesto.

    I made this recipe over Memorial Day weekend for my family and nobody liked it, myself included. It looked really good when Bobby was cooking it on TV, but tasted awful when prepared at home. Plus, it took forever to make.

    I tried this dish at Bolo and it was a fabulous side dish. Following the recipe at home...it was tasty but turned pretty gray and wasn't very appetizing looking.
