i am not a professional pastry chef, but i do love to bake. the reason most pastry recipes use the metric system is to get the precise measurement for all the ingredients. if you use cup, teaspoon, etc., you'll get a loose measurement. the way i see it, if you don't care too much about making the recipe, then don't bake it.
get a digital weighing scale with a gram/oz. measurement and conversion button. they only cost about $20. that should make your life easier. i'm with Russel, the holidays are already stressful enough. don't add to it by trying to bake a cake that uses the metric system.
i trust Bobby Flay enough to rate this recipe a 4 star. after all this is a "throw down" and Bobby's reputation is at stake. i haven't baked it yet, but i will for the holidays. i'll return with my final rating after.

Grams, litres, 3 ounces toasted walnuts? where are we France. Hey Bobby I love your cooking and most of your recipes, but your buddy came to New York to be a pastry chef here right? Well let him convert his measurements to american. And am I missing something or does the average american kitchen actually have a way to measure the weight of walnuts in ounces?, what about 1/4 cup or something like that. This one looked great but after looking at the recipe got very discouraging quick.

I suspect the end result would have been very good, however, I operate on AMERICAN Standard measurements, not Metric. It's bad enough that our government is selling us out with the metric system, i.e. litres vs quarts; 1.75 litres vs 1/2 gallon, being slowly forced upon us. We don't need Bobby Flay helping the conversion. I, personally still live in America, not England, Germany, etc, and resent the forced conversion. Recipes that require conversion, I automatically delete or ignore. Larry G fm Georgia

Honestly, for some people conversion IS that hard. And, again, as a country that uses cups, tablespoons, and teaspoons, posting a recipe in grams is quite pointless. I am an intelligent person (who could convert if necessary who went to look up this recipe because I thought it would be great. The only thing great was my disappointment in finding it was in grams! I don't want recipes in grams, and I don't want to have to do conversions. Please, Food Network, discontinue this practice! Kathy in Nebraska

Honestly...conversion isn't that hard, this is a basic recipe site and you can infer the rest and mix and match and add and subtract so lighten up on the whole "they don't have it right" speech. If you really can't stand the errors and can't troubleshoot, then go to a different site or use strictly cookbooks. No offense but food network probably is busy and has more important things to do than spellcheck the thousands of recipes on this site. Omission in the reviews and be done with it. And if you could answer what the point is of bashing someone on the comments section of a food network recipe Phillip... The "you get over it" part was especially mature. We're talking about food here people. Easy does it.
For those who are interested and can't look it up on google and figure it out themselves,
1 gram =0.0352739619 ounces pick up a calculator and do the math. Besides if you're using a scale, most of them have metric readings anyway.
To the crux of the recipe, It is delicious. I altered it with my own decorations but the basis of the buche I left the same.

I really wanted to make this -- but as two of the reviewers said --- GRAMS -- give me a break. Yes - I could convert it but why should I have to -- let Food Network do it! All to often I have seen recipes posted by the network that are full of errors -- like totally forgetting to give the ingrediants for one of the parts of a recipe. I have even emailed them asking for them to provide the corrections -- NO RESPONSE -- and no correction online. By the way Nate -- you get over it -- and learn to spell -- it is RECIPE!

What are you thinking? Grams??? This is the US. We don't use grams....
Is that anything like a "cubit?"
How about checking what you put on this site. I've found a lot of mistakes in several!
