Very flavorful and easy. I will definitely do this again. I just had chicken thighs, and it decided to rain so I had to forego the BBQ. I put them in the oven on roast and it came out great. I almost didn't do the topping because I didn't think I would like it, but changed my mind and it just intensified the marinade flavors.

Great way to do a chicken on the grill. I had a 5 pound chicken so I modified the recipe a bit. I grilled the chicken skin side down for 15 minutes then turned it and grilled for 15 minutes on the other side. Then turned again for about 10 minutes on each side. I used the reserved garlic and lemon zest with a bit of melted butter and olive oil to make a basting sauce. The trick was getting a nice crust on each side then cooking lower and slower to cook through. I used a thermometer to get to 160 degrees then turned off the covered grill and let the chicken rest until it reached 170 degrees, Yum!

This recipe is exceptionally flavorful - just the intensity and distinctive quality of flavor I appreciate and rarely find. I needed practice de-boning a whole chicken, so I deboned one for this recipe. It resulted in a special presentation that was easy to cut, serve and eat.

It is a great way to grill a whole chicken. It works great with your favorite dry rub also.

This chicken was awesome! It was moist and flavorful. I didn't have any fresh thyme so I used rosemary, which worked out fine. I had never butterflied a whole chicken before, but it was really easy. I just found a video on you tube. I'm looking forward to the leftover chicken tomorrow.

This Grill It Show was one of the best and provided several interesting recipes for those summer grilling days. Problem is, it aired today and it is 10 degrees and snowing outside! The last time that I tried grilling a "butterflied" chicken the skin crisped up fime but them quickly blackened and the white meat does not cook the same as the dark meat, so I had dried out white meat. Good for making a chicken salad.
