I didn't use the cheesecake recipe (I always use Tyler's Ultimate Cheesecake recipe but I wanted something tasty and festive for the sauce. This one certainly did the trick! Made it for my friends for a dinner party and they were REALLY impressed! I was very concerned because I've tried to make caramel before and it didn't come out so well. However, the directions in the recipe were easy to follow. The whole combo was so flavorful and made my apartment smell delicious. Thanks Bobby! (Note-- Didn't use the alcohol and the recipe didn't seem to suffer any.

The orange sugar gave great flavor to the cheesecake, but mine did not set up well. It was a little runny in the middle, but had tremendous flavor. The apples and the caramel were fantastic! I did leave out the Calvados ($55 a bottle is a little steep for a recipe, but it tasted great using only apple juice. Will definitely make again, but maybe cook a little longer next time.

I've seen a comment where someone thought it was too much like custard, and from my usual recipe I always add a 1/2cup flour, so I did it here too and the results seemed on target. Made the cheesecake more, well, "cakey". I'm never a fan of the pudding texture of a lot of cheesecakes. Didn't do the nut-crust, but used chocolate graham crackers instead.

I didn't do the topping here, but did my standard of 2 C sour cream, 1/4 C sugar, 1 tsp almond extract poured on at the end of baking time, and cooked for another 10min.

And for good measure I whipped up a raspberry chocolate ganache to slather over the whole cake. I was tempted to cover the sides with some toasted walnuts, but enough is enough, right? Maybe next time some fresh raspberries to ring the top for presentation purposes.

Turned out great, but definitely not for the carbo-phobic. Hey, you gotta live a little around the holidays.

Everyone loved this cake, although I did alot of changing because I didn't bring a list with me and didn't buy all the correct ingredients. I only use plane cane sugar and no alcohol and vanilla paste instead of the bean. I added ricotta cheese instead of straight cream cheese and it still came out great, the carmel syrup made it.

I brought this cheesecake to a family holiday party, and it was was an enormously successful. My family isn't exactly the type to appreciate a complicated dessert, but they new delicious when they tasted it. I made the cheesecake the night before the party and refrigerated overnight, and then the apple topping and caramel minutes before I served, so that it was warm. The vanilla, orange zest, and the apple brandy were a wonderful combination of flavors, so that nothing was overwhelming and it wasn't too sweet or too heavy.
Definitely worth putting in the time -- they payoff is big on this one.

I am a home cook and have tried many things but not being a big dessert person, I'd never tried making cheesecake. This recipe was so easy and it turned out perfectly. I too substituted brown sugar for muscovado and did not use a vanilla bean, just added more extract. The crust was so flavorful, the filling was perfectly creamy, and the topping was to die for! I thought the apples weren't going to turn out, but I just drained them after they got soft. I did not make the caramel sauce and opted for a very good Whole Foods ready made sauce. I made everything (including apples the day before my 'girls night get together' and assembled the pieces at my friend's house the next night. We just all stared at each other after taking the first bite because it was SO GOOD! I'm making it for Christmas this year and I think everyone will be impressed and satisfied. Thanks Bobbie!

This cheese cake is the best I have ever eaten. I did not have the fancy brown sugar, used light brown in its place. I did make the apple and caramel sauce and I tell you it was good. Can't wait to make it again.

My guys at the firehouse ar huge Food Network fans, so I chose this for my contribution to Thanksgiving dinner last year. I made it the night before work since it was a rather involved recipe and could not be done in the unreliable firehouse ovens.

I substituted the muscavado sugar with high grade dark brown sugar. I could not find apple brandy ANYWHERE, so I subsituted with a recommendationfrom the liquor store with a drink called hot apple pie shots. The cheesecake turned out fantastic! This is not the dessert for a dinner where you want to be talking with family. The sauce is best served immediately and playing hostess or working the firehouse can be an issue. Though the flavors would change, I recommend caramel sauce.

This is not a dessert that is quickly whipped up. It needs some precise attention and work, but the taste is worth it on a special occasion. This has the best flavor of any cheesecake I have eaten from a restaurant, store or made at home.

i looked around on the internet for a substitute for muscovado sugar and every thing i found said to use a good dark brown sugar, or you can just buy it on the internet. with the brown sugar it turned out great and everyone loved it.
