Ingredients
- 4 tablespoons unsalted butter
- 1 red onion, finely diced
- 1 jalapeno, coarsely chopped
- 2 dozen large eggs, lightly beaten
- Salt and freshly ground pepper
- 8 ounces crumbled goat cheese
- 1 bunch finely chopped chives
- Salt and pepper
Directions
Melt the butter in a large cast iron skillet that has been placed on the grates of the grill. Add the onion and jalapeno and cook until soft. Stir in the eggs and season with salt and pepper. Continue stirring the eggs until soft curds form. Remove from the heat and stir in the goat cheese and chives

Great, fast and easy dish! Most any cheese can be subbed but use the goat cheese whenever possible- the creamy bite is what makes the dish!

I quartered this recipe as I was only making it for three people. I love eggs and red onions. Yet this was the first time I ever put them together. Delicious! I used cheddar cheese instead of goat cheese, and this was still awesome. My kids raved about it while eating it. I can't wait to try it with feta, as I don't really go for the goat cheese thing. Chives were a nice addition. Great recipe, Bobby!
