Amazing! I can never get sick of this salad. The only modification I make is leaving out the mint and using regular Sesame Oil, not Toasted. Absolutely delish!! A must try.

I made this last night for some friends. It was excellent! I made a double batch for 3 ladies and 2 teen. Everyone ate 2 large bowls. I did a slight modification. I added half the chili puree and doubled the cilantro.

I cook a lot at home and grew up in the restaurant business. Believe me this recipe is a winner.

Try making this with Olo's Chipotle Paste in a tube! You can find it on Amazon.

This was a great recipe! Everyone loved it.
If you are going to have leftovers and plan on eating this for a few more days, I would recommend not adding the dressing until you use it and not using romaine at all. The romaine starts to wilt after a day and also starts to turn a brownish-red on the stem. Having the Romaine doesn't change the flavor of the salad, it only makes it look greener. Or better yet, add the romaine right before eating.

A nice way to cook the chicken is to Poach it. Boil some very concentrated chicken broth, place the chicken pieces (de-boned is best in the broth and turn off the stove. Let it sit there for 3 hours and you will have some of the most flavorful and moist chicken you have ever tasted.

Great combination of textures and flavours. Nice spice level, too. Found that the amount of dressing is a little shy for the volume of the salad, so I increased the amounts by half.

Tried it first with a pound of shrimp and found that the portions were just a tad generous. Then tried it as specified with the chicken and no one could finish their share.

Very tasty and a nice combination of flavors. The mint really accents this salad beautifully. Dressing is delicious and very light. The whole family loved this for a nice warm summer night supper. Took me longer than 20 minutes with all of the chopping but well worth the time and effort. Will definitely prepare this again. Thanks for the great recipe!!
