    I've made this twice (to rave reviews!. The second time I topped it with grilled tofu which was wonderfully tasty (and filling. As per the review of a previous reader, I too used my food processor which is truly a timesaver for this recipe. I also added Thai basil (in addition to the cilantro...so flavorful! Definitely a keeper.

    The chipotle, peanut butter, ginger, napa, and everything else in this salad blend together perfectly to make a spicy salad bursting with flavor that I could eat daily. We do tend to use less oil than the recipe calls for however. Sometimes we add pasta as well.

    Once I saw this recipe I had to try it. Unfortunately, I was not able to buy/make the chile puree so I skipped it. Didn't really matter, it was still fabulous! It's definitely something I will make again.

    I make this salad all the time now. I omit the canola oil and it works fine. The thing I like about this dish is that you can use ingredients you have in the fridge to make it. Leaving out the chicken or snow peas you still have a tasty dish. A real hit at potlucks...
