    This is by far the best Chinese Chicken salad ever. I was unable to use 2 tsp of Chipoltle pepper. It was to hot for this gringo.

    My family Loved this Salad. I roasted some chicken breats in the oven it was perfect. We also added some crunch to it by incorporating some asian chow mein crunchy noodles.
    If you don't like mint leaves, which we don't I would skip them.

    This is the best Chinese Chicken Salad I've ever had. I bought a rotisserie chicken from the store and it saved so much time. It was very easy to prepare. There was a litle too much ginger for my taste. Next time, I will use a little less. This will be something we make quite often!!

    Can only rate the dressing but just made it and it is fantastic! I added a touch more chipotle and sesame oil for my tastes. And as an added thought, this would make a fabulous dip for sate if you cut the canola oil down by half or so in order to thicken the mixture. As for the salad going limp quickly, in my experience, all Chinese chicken salads suffer from this problem.
