Don't look further for a chinese chicken salad recipe!!! I'm a teacher at a local college and bring this EVERY semester to our potluck...my fellow faculty (and I--can't get enough! Even my husband...the "Oh no salad for dinner??" guy...LOVES THIS FOR DINNER! Prep is a bit more because of all the veggies you have to chop...but well worth it I promise!

This salad is AMAZING! I've made it several times now for all kinds of people and it always gets rave reviews! I keep the dressing separate and let people help themselves - then eat the leftover ginger dressing with just about everything I happen to have in the frig that week...

I absolutely love this recipe exactly the way it is. I notice a lot of people make substitutions. To each their own. I personally would NOT. And to those who cannot figure out where the "chipotle chile puree" is in the store.... it's not! You have to take a can of chipotles in adobo i.e. Embasa, and puree yourself! Another interesting way to enjoy this dish is to wrap all the salad ingredients, in whichever way suits your fancy, in rice paper wrappers soaked in warm water [summer roll] and serve the dressing as your dipping sauce. Hope this helps anybody out there and enjoy! Highly recommend!

I made this for a large family get together and for a work potluck. Both times I doubled the recipe, and both times the bowl was scraped clean. We added extra chipotle and extra honey each time. I would definitely recommend this recipe.

This was tasty! -- While I was preparing it, I got concerned that it would be good -- it's actually delicious. I didn't have any chipotle puree, and I think I actually prefer it without. All the flavors came together really well -- the coriander is great. I liked it a lot -- just doesn't quite make five stars for me, but very very very good.

I just finished making and eating this salad and I must say that I am pleasantly surprised. I was scared to try it because, in all honesty, the sauce smelled really funky. I added a squirt or two of sriracha sauce and just squeezed the juice of two fresh limes into the sauce instead of garnishing with grilled limes. Other than that, I followed the recipe exactly. I'm nervous to see how the salad will hold up with the sauce in it, though, especially considering that I doubled the recipe (I didn't want a random half a head of napa cabbage and romaine lettuce left in my fridge, haha. I'll probably add more cilantro next time but, overall, this was a really good salad and I'll likely make it again!

I made my own version of an asian chicken salad and thought i had more of the spicy peanut asian dressing that i get at trader joes and there was none (this is the only non-homemade dressing i will use in my house so i went online and found this recipe to make the dressing... I was so happy with it that I will probably never again buy the dressing from trader joes.lol It was very easy to make and it had ingredients that I already had in my house. The only thing I did differently was used olive oil instead of canola oil and I didn't use the chipotles...instead i added crushed red pepper and fresh lime juice... it was so fantastic!!! Try it...you'll love it!!!
