    I haven't made the entire salad, but we use the peanut sauce for fresh spring rolls. It is AMAZING! Only change is we use Sriracha Chili Sauce instead of the chipotle puree. YUM!

    Very tasty! Great peanut salad dressing, I used chunky peanut butter instead of smooth.

    Just LOVE this dish! I left out the mint, but everything else I made exactly as written. All of my friends insisted I send them the recipe. Light, fresh and delicious!

    We just finished trying this recipe, not so much as a morsel left! No doubt that this is going to stay at the top of my salad list. I made one change. I was worried that the smoky flavor of the chipotle wouldn't play well with the other flavors and left it out. Instead I sliced up a jalepeno as one of the toppings.

    Very refreshing and delicious! Perfect when you're looking for a light meal in the Summer. Also a good meal to liven up the Winter.

    We make this salad often, despite the fairly lengthy prep time, and love it every time. However, we just skip the chipotle puree - it saves a little time, and the dressing and crispy greens are wonderful by themselves. As long as you keep them separate, this salad can stay delicious for a couple of days.

    this salad dressing is delicious -i could eat it by the spoonful. Reminds me of a good peanut sauce. the salad is so versatile you can use almost any greens - just a good recipe and good for you
