    I rarely find a recipe that requires zero modifications to suit my palate, but I really enjoyed the dressing exactly as it is! My husband and I both LOVED it. I have tried a few other peanut sauce recipes and one bottled dressing, and haven't liked any of them. We are dieting and are always hunting for great homemade dressing recipes (I can't stand bottled dressings and this one fits the bill. Although It is not exactly lean (peanut butter, plenty of oil, a little goes a long way. All it takes is 1 tsp to lightly dress a lunch-sized salad. (BTW If you want to make it a little leaner, you can reduce the oil by half, and thin the dressing with a tiny drizzle of water and no flavor is lost. Thank you, Bobby!

    Great salad, better dressing. Based on other reviews, I used some of the dressing as a marinade. Instead of buying a whole chicken, I bout a couple chicken breasts, pounded them to a uniform thickness, and marinaded them in the dressing before grilling them. Still have dressing left over, but no complaints!

    While the prep time was longer than the Iron Chef's estimate, I really didn't think it was that bad. Just chop up some veggies and throw them together.

    The only change I'd make is to double the cilantro and halve the mint, but that might be personal preference...

    This recipe almost got a four star rating because of the prep time. I used packaged shredded lettuce, and next time I'll use pre-shredded carrots too. I tweaked the dressing by adding more honey and an additional teaspoon of the adobo sauce. It was tasty and my husband and his buddy loved it. I'm not a fan of mint, but it worked well in this recipe. I would make the dressing again and use it as a marinade (I have enough left over to do just that. I have about a quarter cup left over; using it would have made the salad soggy. As others have suggested, I will add some bean sprouts for some additional crunch. I'll probably double the dressing next time just to have some for other stuff!

    When I asked my husband how he liked this he said "it's fine, it does the job". He and I have different tastes though - I thought it was pretty good and the dressing definitely made the recipe. He also hates cilantro and the mint, so I just added that to my portion. I think the fresh herbs make a huge difference.
    I agree the dressing could easily translate into other meals (chicken satay, noodles, etc.
    The reason I gave this a four star rating was the prep time - the biggest part of the prep here is the washing and chopping of all the vegetables. That took me a decent 30 minutes, then 15 mins for the chicken and 15 mins for the dressing. If I were to make this in the future I would alter the ingredients to avoid so much prep time (IE cut some of the veggies out and add some mandarin oranges, maybe some water chestnuts, bean sprouts and extra peanuts. And it looked like everyone else on here had trouble finding the chipotle pepper puree. I just bought a can of chipotle peppers in adobe sauce and used the chipotle sauce that the peppers were soaked in.

    I did not have the chipotles so I used some Thau chili paste I had on hand, and this recipe is my keeper and any go to salad dressing for a Asian Chicken Salad. It is prefect for whatevedr greens you have on hand, My whole family gave it 5 stars tonight.
