I reference this recipe as a formula for vegetarian, non-dairy salads with grains. Last time I made this I used quinoa instead. I also used sweet onions to save time (instead of grilling the red onions. I added some fresh basil to the salad and mixed some dijon with the dressing. It was absolutely delicious. I shared it with some "foodie" friends after I made it at home and everyone raved about it. Don't leave out the mint - the flavor is a perfect addition to the salad.
