I made these for my son's birthday and used my rule of always making cupcakes on the day they will be eaten. They were not only good that day but also good the next! The cake part was airy but moist, the filling was just right- absolutely heaven. Guests were wowed by them and they were really pretty easy to make! I also made 24 cupcakes but with how rich these are, they were just the right size portion. I too had filling left-over but my kids were more than happy to use it on graham crackers.

I liked the flavor and texture of these cupcakes, but they were a little tricky to make if you follow the recipe. Like other reviewers who used standard cupcake (rather than the larger muffin tins, I found that the standard size cupcakes ruptured with 3 tbsp. of cream filling piped into them. One Tbsp. was plenty. I had about 1/3 of the cream filling leftover. I also found the ganache to be too runny, even after it had cooled completely. I started over with 5 oz. of semi-sweet chocolate and found it had a much better consistency.

I'm not a terribly experienced baker, but these are by far the best cupcakes I have ever made. I brought them to a party, and they were literally the hit - almost to the point of embarrassment. The flavors worked perfectly together - the filling tastes so good for something so simple.
I'm not sure if I happen to make small cupcakes - but I ended up with about twice the about the recipe specified, and enough filling for about four times that (my boyfriend promptly fridged the leftover filling for his personal consumption later, so not necessarily a bad thing.

I made the recipe for the cupcakes for s'mores cupcake and I found that the cupcakes had a strong coffee flavor. I might use less coffee and more milk next time. Otherwise, the cupcakes were fine (moist. I have used the PB filling in boxed cake mix, but never the two together. The PB filling is delicious, everytime I've made it.

I made the mistake of not reading all of the reviews. This recipe would probably make 20 (ish regular sized cupcakes. I did use the "large" foil liners and a 12 cup muffin pan but had tons of batter left over. These also rise quite a bit, so don't overfill the liners! I thought the actual cupcake was a little dry for my taste, but with the peanut butter filling (VERY tasty and the ganache on top, they were tasty overall.

I'm not really a chocolate person but my boyfriend requested chocolate cake for his birthday this past Sunday. I searched recipes, read reviews & decided that I'd give these a shot. These cupcakes came out PERFECT & it was so easy that when I was done with the first batch, I made a second. I followed the recipe to the T. As many other reviewers found, the batter makes much more than 12 standard cupcakes, so to work around that I bought a Jumbo cupcake pan & paper liners, each batch made exactly 12 super sized cupcakes perfect for filling. Not only am I not a chocolate person but I am also not really into peanut butter so I filled half my cupcakes with vanilla buttercream & the other half with chocolate buttercream. Needless to say, I loved them, my boyfriend loved them & I think everyone was surprised & impressed that we didn't have the same old chocolate cake.
