Creamed Kale

  • 2 pounds kale, center stalks removed
  • 4 tablespoons unsalted butter
  • 1 cup heavy cream
  • 1/8 teaspoon ground nutmeg
  • Salt and freshly ground pepper

Blanch the kale in lightly salted water until tender, rinse in ice water, drain and cut into 1/2-inch ribbons. In a large saute pan over medium heat, melt the butter and add the kale, cream and nutmeg. Reduce the heat to low and cook for 5 minutes, or until the cream has reduced and thickened. Season with salt and pepper to taste.

    I added garlic, onion and some red pepper flakes as some others suggested. It made it tastier to me. Also used light cream which didn't thicken like heavy cream but was very good and saved calories. Will make this again!
    This was awesome - i didn't change a thing in the recipe. When it was cooked, I put it through my food processor just enough to chop it more finely. This made the consistency closer to the dish I was hoping to replicate from a restaurant on Christmas day. I will make this easy side dish frequently!
    My favourite way of making it. By adding to much garlic ,bacon and all the rest you don't taste the kale.

    This is a great recipe.. I used coconut oil, garlic, diced onions, & red peppers flakes . Instead of cream I substituted fat free condensed milk.. It turned out Fabulous..
    Creamed kale is one of my family's favorite. The kids ask for it all the time!
    I make this often, and everyone, (especially my kids love it! I add garlic to the butter (sometimes I use light Olive oil and then add some Parmesan at the end. They are always asking me to make it.

    The recipe was kind of vague on how long to blanch the kale. I blanched it 10 minutes as per another Bobby Flay recipe. It worked out well.
    I actually enjoyed this more the second day. Maybe all of the flavors had more time to come together.
    I just made this and was very surprised at how much more I like this than creamed spinach, which I also like quite a bit. I sauteed some chopped onion and two chopped cloves of garlic before adding the kale and heavy cream. I also used the bagged kale. It was very good and very easy! This would be a great way to get people who do not like greens to actually eat them!

    I love creamed spinach but I loved this even more! I used a bag of cut up kale pieces--all different colors--from Trader Joe's. It worked great and I didn't have to cut it up or rinse in in ice-cold water. This is a fabulous recipe and will be a regular at our house.
    I make this dish all the time and everyone loves it. To make it a little healthier I use olive oil instead of butter and cut the cream a bit. After I take it off the heat I add a handful of feta cheese and some kalamata olives and/or sun dried tomatoes. Sometimes I toss in some dried chili flakes to give it a kick.
    How is it healthier to cut the butter and cream but add feta cheese
    This made a great topping for pasta shells. It was creamy enough to coat and the kale gave the dish some great color, texture, flavor and vitamins. I also tossed in sliced sun dried tomatoes. Mmmm.
    who would have thunk...creamed kale. it was awesome. i'd take spinach over kale in almost anything, but this definitely gives creamed spinach a run for the best non-starch side dish. i put in too much cream, but i think it just made it better, if runnier.
    So simple and delicious. I had this dish at Mesa Grill on Thanksgiving Day and made it at home within a week. Really easy and terrific!
