    I was only looking for a recipe for the Pesto Mashed Potatoes and found this one. Soooooo glad I did. It rocks!!! I only made the mashed potatoes and my husband gave me a two thumbs up, again. Love you Bobby Flay. Ro in Arizona. Thanks for your autograph.

    Cumin isn't my favorite ingredient usually, but it worked well on this chicken. I didn't have cojita cheese, but the rest of the flavors came through very well. Will try the potatoes and mango sauce next time!

    This dish is lovely. All the flavors work so nicely together. Booby's so talented!

    * I only had sweet potatoes which I used instead of russets and it worked perfectly.

    I must say I was a little scared to try and cook this recipe with how many steps/ingredients there were, but all the cooking was worth it! I chose this recipe to surprise my boyfriend with dinner and he absolutely loved it! He said it was one of the best home-cooked meals that he's had in a long time! :]] The green onion pesto mashed potatoes were heavenly. I must add that the mango sauce did take a lot longer than stated, but still proved to be delicious!

    Although the mange sauce is quite involved, this recipe proved to be well worth it for our dinner party! I do agree with the other comment about making the sauce ahead of time. Also, we modified the recipe to serve 10 and it still turned out great. (We did have far more sauce than we needed though!. It was a huge hit and we will make it again - for sure!

    The sauce takes a long time to make but wow is it worth it. I cooked it out of the Mesa Grill cookbook instead of the on line recipe but the differences are very subtle. Everyone in our family rated it a "5" in our 1-5 scale. The pesto potatoes pairing would be good to try with this next time. I would advise making the sauce in advance if possible and reheating. The chicken took much longer to cook than the recipe says so you may want to factor that in. We'll be trying this sauce on pork chops also.

    We picked up the Mesa Grill cookbook and decided to try this recipe. It was really good, but I couldn't help but think how much better the flavor combos would be with pork, so I tried it again, and substituted pork tenderloin for the chicken... it was delicious! It's a little easier to prepare that way too because you can make the garlic mango sauce while the pork is baking in the oven.

    I am not a big fan of cumin but I loved the cotija and cumin crust on this chicken! I used skinless chicken breats...no need to use the skin...the cumin and cotija were excellent by themselves. I did use the bone-in chicken breasts because I find they are juicier. The Mango-garlic sauce was good but the flavor didn't rival the amount of time it took to make it. Bobby Flay has other sauces out there that are more flavorful and much faster...next time I'll use one of those. I have been working my way through Bobby's MESA cookbook...I have not been disappointed!

    Loved this recipe- cumin is one of our favorite spices. Needed to cook the chicken longer than the recipe says, as well as the sauce- it took a while to reduce down so that it was thick (sticks to the back of a spoon as he says and then it wasn't as sweet. Takes some time but OH so worth it.
