    I made this very soon after the show's first airing. It is comfort food. The mozzarella was very rich. It actually tastes a lot like pizza without the crust. I needed more bake time because I like my eggplant almost melting. Now the star of this dish was the red pepper pesto. Today, I just made a big jar of the pesto. If you grill the peppers outside the smoky taste is so good as in this recipe. I just grilled them right on my stove and I had some really good tasting olive oil. The pesto is so darn delicious I've decided I need to keep a jar of it in my fridge. It would be good on sandwiches, pasta, and it could substitute for the tomato sauce on a homemade pizza. The pesto is so good. Thanks for this one Bobby.
