In order for a diverse group of people to enjoy fried alligator you must do something more than cut in to cubs, this gives a chewey texture unpleasing to the palit, no matter what kind of dipping sauce you serve with it. You need to first pound out the entrails and mairinade the meat in a acid like lemon, lime juice or vinager for at least half hour before cooking. Than season and dredge in your favorite coating, fry it in peanut oil, yes peanut oil. Try it you will be amased at the texture and flavor.
