The sauce goes so well with the chokes........be careful not to over cook the chokes because they will fall apart on the grill. I found I had to use a really sharp knife to cut the chokes without mangling them. It was kind of a trick to get them to stay together on the grill, but it didnt matter. Prior to boiling I cut the tips off the chokes and post boiling I removed the outer leaves. I dont know how you're suppose to "smoke" the tomatoes, but I halved them and threw 'em on the grill for 5-7 min a side, low-med heat. I served the chokes in a deep dish, hollowed side up and filled them with the vinaigrette. I also had extra to dip the leaves in.

If you boil the artichoke for 30 - 35 min like the recipe calls for , the artichoke falls apart and is not really good for the grill. Did anyone else have this problem? The vinaigrette is great and can be used on several vegetables as others mentioned in their reviews.

This is the first time I tried artichoke. It was kinda chewey and fibrous. May have been my fault, since I am not familiar with it. BUT, the tomato vinagrette was amazing, the flavirs are perfect, i want to pour it over everything.

Lots of fun to eat with your fingers.

Vinaigrette is wonderful and can be made a day ahead.
Great side dish. I plan to serve it Paella. I also plan to add some artichoke hearts because you just don't get enough.

It wil become a family favorite. The vinaigrette can be used on many other vegeatables, such as green beans, long beans and even broccli.
