    The recipe is time consuming and not necessarily worth it, BUT THE SAUCE DESERVES FIVE STARS ALONE. Make it and try it on basic baked or grilled chicken -- it is awesome. In his cookbook GRILLING FOR LIFE, Bobby Flay suggests trying it on eggs -- equally awesome. It would probably also be good on fish tacos.

    As a college student, I find it hard sometimes to use recipes that have too many ingredients or too many tools. I managed this one with ease, although I put the goat cheese stuffing on top instead of actually stuffing the chicken. But the cheese and the sauce work perfectly together and the meal was a huge hit with my roommates!

    This was amazing! Everyone i fed it to loved it. It wasn't too heavy and it was very flavorful. My boyfriend could have drank the Cilnatro Sauce alone.

    I had to take off a star because this recipe was a chore. Between the coals on the grill, smashing the chicken, the stuffing & the sauce, I was calling for help to get a starch & veggies prepared for dinner.

    I was skeptical about the thyme & cilantro pairing but it was delicous! Anytime I find myself dipping back ino the sauces for a "second taste" I know it is going to be good.

    Use this recipe the night before a party. The goat cheese stuffing is great on a ritz & the cilantro sauce is tasty on a tortilla chip.

    I made this dish for some friends this weekend and everyone loved it! The chicken was tender and flavorful. The goat cheese stuffing was rich and delicious. I had to improvise a little. I used roasted habanero peppers instead of smoked poblanos so the sauce came out really spicy but everyone loved it. I also found that my chicken stuffing technique needs to be perfected! But I'm definitely making this dish again. Thanks Bobby!

    its the best!! i thought it was easier to broil stufed chk so cheese would't fall out instead of griling. I added sweet plantains for a side which totally complemented the delicious sauce.

    Made this for a family get together, and everyone just raved about it. Chicken was moist and the robust flavors of the goat cheese filling made my mouth explode... especially with the sauce!! Making it again this weekend for a birthday party!

    Tasted delicious, but the preparation was kind of messy. Used cubanels instead of poblanos and the sauce was excellent. I love goat cheese.
