a simple, great summer dish. i used a grill pan instead of an outdoor grill with very thin-sliced chicken breasts and found i didn't even need the olive oil in the marinade. !

This is such a fantastic recipe. Besides being light and low in calories, it is full of flavor. This will wow your guests at a BBQ. This is one of my favorite things to eat, bar none!

the chicken was so juicy and tender, we grill it outside on charcoal but anyway would be great. i took someones advice and sauteed cherry tomatoes for the arugula salad and added a bit of minced garlic it MADE the salad!!! awesome meal.

I love this recipe and make it often....sometimes I use cherry tomatoes that have been sauted in olive oil for a few moments or I'll add home roasted red peppers to change up the flavor.

I made this as a last minute week night dinner, and I thought it was delicious! I will for sure make it again! Most of the ingredients I had on hand and the pairing of the lemon, chicken and arugula was delicious. Not to mention it was light and healthy.

I liked the chicken. It wasn't the best chicken that I've ever tasted, but it was good. It was pretty quick to make, which makes it great for weeknights. I substituted some sauteed asparagus for the salad to please my daughter. She really liked the chicken. All-in-all I would definitely make this again for a quick weeknight main course.

This recipe is fantastic! So light and delicious and so easy to make. The chicken is so flavorful and I love that the marinade is so simple...I usually have the ingredients on hand already! This is my "go-to" recipe when we have friends over for a casual dinner in the summer and I always get rave reviews. I toss some quartered baby red potatoes in olive oil, garlic powder, salt & pepper and roast them on the grill in a disposable aluminum pan as a side dish. The best part about this recipe (other than needing so few ingredients and being delicious! is that you can pretty much prep everything ahead of time and not miss out on time with your guests when you're cooking or cleaning up.
