You can create up to five timers

Ingredients

  • 1 pound unsalted butter, slightly softened
  • 1 pint ripe blueberries
  • 1/4 cup honey
  • 8 homemade or store bought corn muffins, sliced in 1/2 horizontally

Directions

Place ingredients, except muffins, in a food processor and process until smooth. Place in a ramekin, cover and refrigerate for at least 2 hours.

Place the muffins, cut-side down on the grill and grill until golden brown. Remove from the grill and slather with blueberry butter.

    This recipe is creative and fantastic... the mixture of the blueberries, honey and butter is amazing and goes very well with the corn muffins. Grill is not necessary for this recipe, but if you plan on grilling meat for a breakfast meal and have the muffins as a side meal then it would be worth throwing the muffins on the grill. I did and it turned out great!!

    Somewhat bland? Yes. Servng size off? Yes. Simple and different? Yes! I like this recipe because it is very easy to make, and something that guests are not expecting. It's really not worth the effort of 'firing up the grill', though. Unless you have something else to go with it. For the serving size...you can reduce by half, at least. I don't think I'm a talented enough chef to spice it up, however. (The bloody mary mix from this episode does that for me.

    For starters....I should have realized that something was not quite right when it read 8 servings....1 pound of butter and 1 pint of blueberries and it is only 8 servings? Bland and not a good texture.....Why are there not any other reviews (good or bad on this recipe? Would like to know a better measurement of ingredients for this...
