I made this as part of a pot luck cookout. I was given the task of bringing corn. I was like great, there isn't much different or unique you can do with corn. So I went looking for what to do.

I made 2 batches, both with the garlic butter, one with cheese, one with out.

I was able to find the cotija at every store i went to, and I am in the north east, They even had it at our discount supermarket. However parmesan would work just as well if I couldn't find it.

Made this twice already and this will become a standard summer recipe in my house from now on.

Everybody loves grilled corn and I really don't think Bobby does anything special in this regard. Anybody that has ever made grilled corn can probably use their own method for that part of the recipe. But that butter and cheese. That's where it's at.
In case anybody is interested, I made this recipe twice. The 1st time, I followed the recipe to a tee and it was great. The 2nd time, I made two substitutions and I actually liked it better.

I replaced the habanero pepper in the butter with some chipotle chili powder I had (about 1.2 tsp.
I also had a tough time finding the cotija cheese the 1st time around. I found it but had to drive 20 miles to get it. This time, I used parmesan reggialo. The difference in the recipe was actually minimal although I did prefer the parmesan over the cotija.

Do yourself a favor and make this once. You will become a believer

This recipe was such a magnificent and amazing new change to just plain old butter on our corn. What we did was cut off all the kernels and just put a HUGE dollup of this delicious, garlicky, spicy, and oniony butter (all my favorite tastes!!! in the middle of the pile then mix it all up. We did not put the cheese though, but we still could not stop eating the yummyyyy corn! I bet the cheese will enhance the flavor even more!! Thanks Bobby!!!

Very easy to follow directions. Brought home (to the Adirondack Mountains our Maine lobster.
A hit with my husband and daughter.
Went beautifully with our "Maine Shore Dinner" of lobster, baked on the grill potatoes and blueberry pie .
A great ending to our Maine excursion!
    Thanks Bobby!
