This is seriously one of the best corn recipes EVER!! I used sour cream since that's what I had on hand. It turned out so tasty. The combo of lime and chili is amazing with the corn. I will definitely make this again!! ;-

Me & my girl friends shared this dish at Mesa Grill NYC on our last meal during our NYC vacation last year...We all fell in love with it, I was so glad that I found it on FN.com a few months later, I made it for my family, except I used sour cream because I could not find creme freiche..this is the yummiest corn salad we have ever had. Can't wait to go to Mesa Grill Las Vegas to have this again... You are the best Bobby

This was sooooooo friggin good. I added a half of red onion and a red jalapeno. I used sour cream, since I could not find the creme fraiche. It was so very, very good. It was so good I forgot the cheese........and did not realize it until I did this review. I ate it on a arugula and steak salad, but mostly just wanted to eat it by itself. Going into my recipe box as a summer staple. I highly recommend this!

I've made this recipe and everytime I do I get rave reviews. Just to add a time saving tip. When I can't grill the corn I get a couple of bags of frozen sweet corn. It helps balance the heat from the chili. I have some family members and friends who can't tolerate spicy like I can but when I make at home I bring on the heat. If you can't find ancho chili powder if you go to the latin section of your store. There's a candy called Lucas powder, that's a good substitute. But don't get the one called baby Lucas because it's sweet. I

Had this Sunday night at Bobby's Mesa Grill in NYC. If you ever thought corn was boring, you MUST make this. It is the best side dish I have ever had!

If I could put out a bulletin on this site I would. You have to try this receipe. It takes a little work, but it id worth every minute of your time. The flavors are unbelieveable. Mr. Flay you did it again. I could not find the ancho chili powder, but I had some fresh serrano chile and chopped it up and added a little to the receipte with some fire roasted green chiles from Santa Fe. With or without the heat it is great. I served this with Bobby Flay's Buterflied Cuban Pork and green beans. I can see using this receipe with other main courses - soft shell crabs, Maryland crab cakes, chicken - you name it. Thanks agin Bobby. You're the man of the grill!

Excellent recipe - easy to make, love using the skillet on the charcoal grill. The spices made it very tasty, but not too hot.
