I made this dressing for a chopped salad, and then used it on green salads and sandwiches for the rest of the week. Outstanding flavor!
My one change, which I think improves the dressing, was to make this in a blender (isn't that how Bobby did it in the show?. The processed scallions gave the dressing a very rich texture and it stayed emulsified for days. Next time I might chop the chives by hand and add them at the end for the visual impact, but it was a piece of cake to make in the blender (or food processor. Everyone loved it.

At first taste, I wasn't sure that I would like this, but after a few bites, I became obsessed with it, sneaking downstairs in the middle of the night to polish it off. I'll be making it all summer.

I like many of Bobby's one day guests, butI agree ....there was something kindly, knowledgeable and endearing about this woman. I'm not sure if the execs actually read these comments, but if they do...bring Kitty back. As for the corn, good, but I dare the average cook like me to successfuly cut the corn in sheets.It may not happen. Otherwise, nice vinaigrette.

I added some edamame to the corn and topped the veggies with grilled halibut. I poured the scallion vinaigrette over the whole dish and it was sooo good. My husband ate all of his and then cleaned up my plate too! I'll be making this again as well as adding the dressing to other dishes. Thanks Bobby!

Art was asking about this recipe from the show. He didn't give amounts, so just listing ingredients and my thoughts. His Basil Oil recipe has been on a few other episodes, so including it here. Have fun--it's fantastic!
Tomato-Avocado Salad with Basil Oil-Bobby Flay
Tomatoes
Avocados
Red Onion (I would use shallot
Torn Basil
Toasted Pine Nuts
Cotija Cheese (Mexican cheese similar to feta in taste and consistency
Salt & Pepper-Careful of salt (wait til end, as cheese is salty and basil oil has salt
Fold in Basil Oil and serve:
Basil Oil-Bobby Flay
? 3/4 cup extra-virgin olive oil
? 1/3 cup fresh basil leaves
? Salt
? Freshly ground black pepper
Combine the oil, basil and salt and pepper in a blender and blend for 5 minutes. Strain the oil into a bowl.

This was so good and so flavorful. It was easy to make and quite a side dish for a BBQ. I will make this many more times while the corn is in season. Once again Bobby, you have a hit!!!

This vinaigrette is delicious!! I wanted to kick it up a bit with the veggies so I actually turned this into a panzenella salad by mixing the grilled corn, red onion, red pepper, cherry tomatoes, and fresh croutons (which i made by cutting up a baguette drizzling with olive oil and salt and pepper and baking till nice and crunchy I mixed all of these together and drizzled the vinaigrette over the top and let sit for a few minutes before serving!! it was the perfect summer side dish!!!

I made a double batch of this for a picnic. I boiled the corn because my grill was acting up. The vinagrette was tasty, but a bit on the sour side for me. I added a few teaspoons of sugar ( remember, I made a double batch to even it out. I think the honey was supposed to do that, but it was too subtle for me.
