    Great recipe. I did not turn on the grill outside, but just used our gas range instead. I too reduced the amount of mozzarella and garlic. This was really delicious and relatively easy. I salted and let my eggplant "sweat" while preparing everything else, which I later wiped off with a paper towel and then sauteed.

    This sandwich was awesome! Next time we'll substitute a portabella mushroom for the eggplant. Eggplant was a little difficult to work with.

    I also used Veganese and roasted the garlic first, the whole thing was sinfully delicious. Will be staple summer sandwich for family and friends! YUMMM!

    Loved this sandwich! A little messy but yummy! I used Veganese instead of mayo, love garlic so I used the same amount. Definitely not a date sandwich!

    A fantastic sandwich. I tried it once with a french baguette, which was a serious mistake. Stick with the ciabatta and it is a 5 star sandwich (and for my family and me it was the right amount of garlic--not too much, just perfect. As is this sandwich: perfect!

    absolutely delicious! substituted a spread of goat cheese for Mozzarella, and whole grain fresh bread for ciabatta (that's what we had on hand! turned out great! We seasoned the sliced eggplant with S & P and the oil and let it sit in while the peppers were cooking/ steaming. Then grilled eggplant... these were gourmet sandwiches at their best! definitely worth the step of making the garlic mayo!!!! enjoy! thanks Bobby!

    Super easy. Instead of using ciabtta I used italian bread. Great for a vegetarian bbq dish.
