    Loved this recipe! I took the advice of others and also cut back on the garlic and it was still more than enough. Also added grilled portabella mushrooms. Didn't miss the meat at all. Making this again for a friend later in the week and can't wait!

    This was an excellent reciepe. I made it for a friend and she loved it as well! A couple of things, just FYI I too cut back the garlic to 3 cloves and it was enough, just right. The ciabatta bread was really the perfect bread for this, try to get it if possible.I suggest to slice the Mozz not to thick, I love cheese but to thick and it has a tendancy to glop up and overdu instead of inhance. I served this with corn on the cob off the grill it was perfect as well because so lite. One word about this sandwich, it is VERY filling, it looks picture perfect and is very decieving. This would be a great party sandwich set out sliced, to help themselves,kinda like a big sub sandwich.

    This sandwich was very satisfying. Tons of flavors however the garlic was the most present. I'd cut down to 2 cloves, 1 if you don't like a lot. I love garlic and it was strong for me. I didn't have fresh basil so I put dry in the mayo after I smushed it my palm to release the oils (thanks Ina. It worked just fine. I would suggest to put ciabatta under the broiler for a minute with the mozzarella so it will melt. Mine didn't melt a bit the way the recipe reads. Good sandwich overall.

    This is a delicious sandwich! We added a balsamic vinegarette (from Giada's grilled veggie recipe as we love it on eggplant and drizzled it on the fresh mozzarella cheese. Will definitely make again! Thanks Bobby! On a side note we tried two ways with grilled ciabatta and without grilling the ciabatta. Grilled is the way to go!

    This sandwich had so much flavor. We added grilled portabella mushrooms for more flavor. We grilled meat afterward and I didn't want it. This sandwich is now a favorite!

    Some work with all the grilled veggies, but worth it! Delicious! Took the leftover grilled eggplant and made Bobby's eggplant salad for a dinner side dish - yummy!

    Got some baby eggplant in my local produce box last week and needed to find a good recipe. OMG DELISH!!!!!!!!!! My husband said the sandwich reminded him of Italy (lived there 4 years. This recipe is a keeper and I've already forwarded out to my vegetarian friends. Thanks for a great, easy and delicious recipe Bobby!
