    Watched the cook off between Bobby and his sidekicks Sunday morning, went to the store and bought the items (minus the fresh basil growing outside my deck. Had to substitue the bread but still worked.

    I cut the eggplant across to layer better on the bread and used a "salad spring mix" in place of the Arugula (not plentiful here, worked perfectly! Fantastic sandwich! Son and husband loved it! (son even ate it with the Roasted Red Peppers.

    This one is a keeper for future quick fixes!

    This sandwich received great reviews from my husband. He loves eggplant. It was great to have something from the grill other then the same old steak, ribs or chicken. I liked it a lot myself, however, I would choose a bread that is not as thick as ciabiatta next time. To me..the bread can take the taste of the veggies away. It was great though. Thanks Mr. Flay.

    I saw this episode this morning and couldn't wait to make this for my family. It was so easy to make and the flavors just exploded in your mouth. They didn't even know there was no meat on this sandwich. This one goes in the file to be made again.

    I watched the show this morning and immediately went to the grocery store to get the ingredients. The basil gives it a fresh taste and the garlic mayo ties everything together. I can't wait to show this one off to others. Once again, Bobby has exceeded my expectations.
