    I agree with another reviewer that it is not the most good looking dish but hey it's eggplant and it didn't stop me from bringing it to my sister's house for dinner. It is really really delicous. I will be making this again and again for sure since they are all my favorites, eggplant, red onion, and avocado.

    This recipe is delicious. I used about five Japanese eggplants instead of the Italian eggplant. I'll have to say that this isn't the best looking salad, but the flavor is fantastic. I'm making it again tomorrow for my mom's birthday.

    Very delicious and easy to make! I added a squeeze of lemon for just a bit more tang. The lemon and the zest really bring this dish to life.
