    The grit cakes were AMAZING. I added some milk and some cheese to add a little more southern kick! Used these as a side to grilled pork tenderloin and summer veggies with chimchurri sauce!

    Don't let the look of those Grit Cakes keep you from trying this relish; I don't bother with them anyhow but make the corn relish to serve with blue corn tortilla chips; that's if I can keep from eating the whole 6 ears by spoon from the bowl!

    I thought it was best when served on the day of preparation; was fine the next day but not quite the same totally fresh experience.

    This recipe is amazing. I can't stop eating it. Even two out of four of my kids like it and that is amazing in and of itself. I couldn't find the poblano peppers so i used jalapenos.....yummy!

    I'm always looking for something different in a side dish, and this was a GREAT twist and DELICIOUS fusion of some common ingredients you will find in your kitchen or any grocery store. Try adding a few drops of tabasco to the grits if you like a little spice, and a little red pepper to the relish for extra color. You can even create this recipe easily without the grill for an equally spectacular effect. My husband mentioned TWICE at the table that he liked it, and that's an awesome testimonial for this yummy and inexpensive treat!

    Normally, I am not a grits fan, but this recipe made grits not only enjoyable, but suitable for more than breakfast. I absolutely love the relish. It was a huge hit in the house. I can see it becoming a regular item.
