    The traditional way to grill this fabulous cheese is to rinse first (it's very salty, slice, then grill. Brushing with olive oil is optional but very tasty. This is much tastier than grilling the entire piece.

    I'm famous among friends for grilling almost everything so when I saw a recipe for grilled cheese, I couldn't wait to try it. There's nothing wrong with this recipe; it's the cheese itself that was disappointing. I expected the cheese to melt and be very soft -- more like brie when baked -- but the cheese doesn't give at all to the heat. It's very plastic and actually squeaks in your teeth when you eat it. I marinated the cheese in olive oil, grill seasoning and hot pepper flakes but the dense cheese took on none of the flavors. All of my friends agreed: This is a "do not repeat" recipe.

    This recipe is awesome! I am a personal chef specializing in Mediterranean cuisine and this is a very popular party recipe on my menu. I love your recipes--easy to follow and always a hit-healthy too (usually! Keep up the good work!

    Halloumi cheese is a new thing around TX but we have one store in Austin that carries it. I tried this tonight after having it at a Mediterranean cafe last week and it was even better at home with a little caramelized garlic chunks on top. Bobby's idea to add the lemon juice was the kicker. GREAT recipe!!
