I didn't really like it. My boyfriend claimed he did but he did not eat the leftovers. It was definately a different twist on potato salad.

This was not very good at all. So many peppers and onions that they drown out the fact that this is a potato salad. The vinaigrette was bland and too oily. 20 minute cook time? It takes way more than 20 minutes just to grill, peel and seed all those vegetables. And why did I have to leave the skins on the onions? I ended up having to peel off a bunch of messy charred onion skins after I grilled them.
I took this to a family picnic and it was NOT a big hit. My father-in-law told me never to bring this stuff near him again. My wife's uncle said he liked it, but he was really drunk.
On the other hand, this recipe serves much more than 4 so I got to bring home a bunch of leftovers. Now I will be eating this garbage for the next week. Lucky me.

Definitely the favorite part of father's day dinner. Everyone LOVED this. I didn't have sherry vinegar so i used rice wine vinegar. It was delicious.

Made the grilled potato salad for Sunday dinner with Grandpa and my family. Everyone including my 3 year old loved it. I substituted blasamic vinegar for the sherry vinegar. Great flavor.

This was a delicious potato salad. I added basil and used balsamic vinegar and it was great.
