I've wanted to make Ratatouille ever since I watched the movie a few years ago but never saw a recipe that looked good. This recipe was fantastic and so easy!! Thanks again Bobby!

I just made this for my family and in-laws....it was awesome! The only thing I will do a little bit different next time is add the garlic to the veggies before I girll them. It was VERY garlicy and not everyone is as big of a fan of garlic as I am. Me.....I loved every garlicy bite! Way better than my old recipe. Oh, and like one of the other reviews I read, I also took the skins off the peppers and tomatoes. ♥

This is a favorite of mine, so delicious and really healthy. I add crimini mushrooms to the mix and toss the ratatouille with a little aged balsamic before serving. We have also used the leftovers in scrambled eggs with feta cheese and chipotle salsa. Excellent!

The veggies are coming in my garden like gang busters. This is by far the best recipe for ratatouille I have ever made or tasted. I grill the peppers and peel them and also slip the skins off the cherry tomatoes. Everyone that has eaten this has gone back for seconds.

This Grilled Ratatouille is loaded with flavor. The fresh oregano and parsley make this a really bright-tasting dish.

While my grill was too small to grill all the vegetables at once, we thought this dish was absolutely fabulous. It made a hearty main dish by itself. I used several large basil leaves instead of the oregano due to what I had ready in the garden. This was a fabulous meal!

This was wonderful. Lots of fresh taste and color. I forgot to buy the eggplant, but it was just as good without it.
I used a sweet onion instead of a red.
You don't notice the raw garlic when eating it, but you do seem to burp it up all evening eating it. If you don't LOVE garlic, I would suggest sauteing it in a pan first (don't overcook it or it will get bitter. I served this with Bobby's Grilled Lamb Chops w/ Tapenade Butter and the family loved it, even the kids ate everything!

Growing up in Louisiana I had ratatouille often. It was cooked on the stove in my Dad's cast iron skillet, and was delicous hot and cold. This grilled recipie by Bobby Flay has now replaced all family recipies as we love the smokey flavor from the grill...absolutely one of the best! Thanks Bobby.
