This is a tasty recipe, but I believe as written it has some flaws. First, as others have noted, this is waaaayyy too much dressing for 2 medium zucchini. I used 4 squash, and it was still way too much -- you could easily coat 8 medium squash with this much dressing. Also, cutting the zucchini into thin strips is OK, but I think chunking it or cutting it into rounds or on the diagonal would probably be better, giving the squash more "body." Grilling time is more than 1 minute per side, even if cut into thin slices, which I did. If you only halve the zucchini, it will take considerably longer. I don't know about Bobby's people, but 2 medium zucchini would not feed any 4 people I know...even the 4 zucchini I used didn't make it. I will make this again, but will do things differently based on my first experience with the recipe.

OMG! Delicious, what a different flavor for zucchini. The mix of the dressing, pine nuts and herbs create an explosion of flavor in your mouth, together with the smoky flavor of the grilled zucckini. Another great recipe from Bobby

There are some issues with the way this recipe was written vs. the video. 1. Bobby cuts the zucchini in half, then grills it. It is not in thin strips. In fact, he makes a comment about cutting vegetables to small and them falling into the grill. After it is grilled, he cuts it into chunks, not strips. 2. The recipe says to grill about a minute on each side. On the video, he says cooking time will be about 8 minutes. 3. The honey appears to be about a Tablespoon. I'm not sure why they didn't give you a measure as opposed to "to taste."
Both my husband and I agree that it was good, not great. Maybe it was too much dressing. It felt like the zucchini got lost... I doubt I will try it again.

This was a real winner (and, as much I love food-tv recipes, I hardly ever give 5 stars! The dressing was spot on (and I can't wait to try it on other things, like maybe fish, and the pine nuts just put it over the edge. "Jumbo flavor," yeah, no kidding.

This is delicious and even my five year old son loved it (even though he thought he did not like zucchini! However, my only comment is that the grilled zucchini is so delicious just on its own that I wish I had only used less than half of the dressing- it was a little overpowering, though it had a delicious flavor.

Made this tonight with zucchini and yellow squash. We picked the mint and added basil out of our garden. This was REALLY good and a great way to eat zucchini and squash! Try it! You will like it!

Dressing was great, and with the smokiness of the grill on the zucchini, it was awesome. Pine nuts added the perfect full flavor to it all and pulled it all together. I was surprised how much I loved the mint in the recipe. Absolutely try that!

Everyone loved it. I sliced my zucchini about 3/8" thick, worked well. Another great way to use some of the larger zucchinis from your garden.
