    I will be making this every single week for the rest of my life... it's SO good. I didn't use the mint or pine nuts and substituted the romano for goat cheese. It was amazing!

    I just made this dish for my husband with the grilled shrimp scampi and it was fantastic! The very best way I've ever personally had zucchini, I could literally eat a whole bowl of just this. I will make this again very often.
