    Ok,here's the verdict! I served this at our Labor Day week end party, the reaction from my guests was " Oh my Gravy, this is the most refeshing and best salad I've EVER eaten" My brother could'nt get enough of it.He called me when he was on his way back to Louisiana and asked me for the recipe. I will be making this again!

    Very good flavors, but the portions are bizarre. When I bought a jicama at a local store, it was about 4 pounds - nearly as heavy as the watermelon! I'd suggest a ratio of about 3 parts watermelon to one part Jicama, because Jicama is not very tasty. Also, boost the mint slightly. Otherwise the salad is awesome.

    A question for those who have made this recipe. How far in advance have you made this without compromising the ingredients? I don't want a soggy salad, but would like to make it a few hours before serving.

    Ok, just tried this salad. WOW, you want a nice clean refreshing salad on these hot days, this is it. If you have never tried jicama, please do. This is light, cool and very good! Great for those cookouts that you will have all summer long. Thanks Bobby!!

    This was a very light and refreshing salad! Mint is a strong herb to get used to, but it goes great with watermelon. It was my first time trying jicama and I was pleasantly surprised. It gives a great texture profile. The salad is a great dish for a hot summer day!

    Wonderful recipe! I made it several times this Summer. It is so refreshing my husband insisted I would make it for our weekend at the beach! My friends loved it and I was happy to introduce Jicama to a few who had never heard of the root before.
