The pie filling was fantastic! I had a little trouble with the topping. I used GOYA coconut cream however, not the one suggested. I added all of the ingredients, began to whip but it never peaked. It finally flattened out and became runny. The flavor of the cream was good but it never set up.

This recipe is fantastic, it's fun an easy. Every time I make the pie it's a huge hit now when I make it I have to make two or even three pies. It has a great taste it's light and it's just a nice way to enjoy summer. I've used many different recipes but this is my favorite.

I made this for our Dinner Club, Hawaiian Cusine, I added chopped Macadamia Nuts to the crust. The pie was a Hit, I will definitely make this again.

Are you sure the rum is in the topping? I thought it was in the filling. Why didn't they put it in the recipe?

I missed the beginning of this show. Where did he put the coconut rum? In with the pie part or the whipped cream part? Any idea how much? Both the recipes sound good and I can't wait to try them.
