Wonderful Recipe!
I've been to Clinton Street Bakery and their blueberry pancakes are great as well. I don't know which ones I like best! An order of blueberry pancakes and scrambled eggs at Clinton Street Bakery cost me $20. The ingredients for these cost me well over that! The Grade B maple syrup was $15 alone!!! Nonetheless they were delish!
The recipe didn't say how much Cassis to use, so I used two caps full. I couldn't afford the vanilla bean, so I used a very small (less than 1/8 amount of vanilla extract instead and it came out fine. Also, I omitted the mint leaves and ricotta because of cost.
FYI Cassis is also known as Creme de Cassis. It is a sweet liquor. I found it by the margarita mixes. Also, IT DOES NOT YIELD 20 pancakes! I don't care how small you make them, you won't get 20 reasonable sized pancakes. I got 10 and I made them avg size.
These were divine! You must try this recipe!
Because of cost, I think it's best to make all the pancakes you can and freeze the leftovers. If you are like me I tent to sit my extra batter in the fridge and forget about it. DONT DO THAT! These cost way too much to make and they do well in the freezer. Use a toaster oven to warm later.

I made the pancake recipe with out all the other expensive ingredients. I omitted the ricotta cheese and used maple syrup to drizzle over the top. There wonderful. My grandkids love em.

These are the most flavorful pancakes I have ever had. I just loved everything about this recipe. The blueberry compote is to die for. I love the smooth texture of the cheese in this dish. Will definitely make this again and again.

I own a B&B and was not impressed with this recipe. I have tried them all. The best pancakes are using Bisquick, ultimate recipe on box, using eggs, baking powder, sugar and milk and 1/2&1/2 and LEMON JUICE ( essential. Make the batter at least 1/2 hour ahead. You will need to add more 1/2&1/2 before hitting the pan. I use 8" nonstick saute pans and add teas butter to hot pan, flip when edges are done. It is necessary to keep the batter thin, should flow off the dasher. The so called "secret ingredient " in Clinton Street is the LEMON JUICE as it acts like buttermilk, reducing gluten.

For our Saturday Morning breakfast I did not want to use a pancake mix again, I wanted to make pancakes from scratch. I remembered watching this Throwdown episode and decided to give the recipe a try. The batter was very light and fluffy and was even tasty when I tried it raw.
I did not have any type of berries in the house and no fresh buttermilk. Instead I used dry cultured buttermilk mixed with half the recommended water and substituted the other half with 1% milk. Then I peeled two granny smith apples, sliced them using the peeler and lightly mixed them with a pinch of cinnamon into the batter. The mixture yielded 12 pancakes.
The result was wonderful. We at the pancakes with some real Canadian maple syrup, which enhanced the flavor even more. Later that day I ate one of the cold pancakes just garnished with some powdered sugar and it was just as delicious. I could see topping the pancakes with whipping cream as well.
Mixing the apples directly into the batter took some of the fluff away and made it a little more difficult to get them done. Next time I will wait to add the apples until the batter starts bubbling on the pan and see if that makes a difference.

I made these this Sun morning, and followed the recipe exactly. They were heavy and the batter was too thick. I knew this when I made the batter but went ahead and cooked them on the grill adding the blueberries when I turned them. They were ok, not as good as they looked from the Clinton St Bakery in NY. I too wish they would publish their recipe.
