I am NOT a very good cook. but these pancakes were the best things I have ever made.. I watched Bobby make these on the Food Channel. I made them with the ricotta cheese but didn't use the maple syrup since the compote had o much flavor and sweetness. My family loves these pancakes and I have made them 3 times in the past 6 weeks. As said below they do freeze well and reheat in the microwave the next day very well.

Made this for Sunday morning breakfast - Everyone loved it. Yes, a litlle work with all the components, but I wouldn't leave anything out. The ricotta cheese topping, the blueberry syrup and the blueberry compote all added to one spectacular breakfast. I doubled the batter part as there were so many comments that the recipe was too small. I ended up with leftovers, which I cooked and froze. Will pop them into the toaster when wanted. Thanks so much for this one - it will go into my favorites file.

The ricotta is NOT missing. I just watched the episode, and he took the Ricotta cheese out of the pancake batter because it was too heavy. His assistant suggested toping the cake with the ricotta cheese, and syrup, which is what he did. So the ricotta is not in the cake, its part of the topping....YUMMY!

I'm not a great cook, but this recipe made me look like a rockstar chef! I didn't have any blueberries, so I made "plain" buttermilk pancakes using this recipe. There were the best pancakes, hands down. My hubby couldn't stop raving about them. Delicious. Moist. Fluffy. Tasty. The only downside is that you end up using 3 large bowls: 1 for the dry ingredients, 1 for the wet ingredients, and 1 to beat the egg whites. A lot of dishes, but the delicious results are worth the effort and trouble.
Definitely a must-save recipe! Enjoy!

I made these pancakes last night for "breakfast" dinner. We all agreed -- best pancakes ever! That being said, I did make the sauce & the relish & I did use the ricotta. I also followed all the recipes exactly. I think without all the "accroutements" that it was just a great blueberry pancake recipe. But with the sauce & the relish & the ricotta, the recipe was brought to a different level. I was lucky enough to have just seen this episode, so I remembered how to put it together. I think the end to the recipe where you put everything together was omitted in the online recipe. After cooking the pancakes, top each serving with some sauce, then the blueberry relish & top this all with a dollop of high-quality ricotta. That's it ... just plain ricotta. I got some great fresh Ricotta Calabro online (Murray's Cheese Co. -- It's so good I just eat it out of the carton. Please try this recipe with the ricotta, the freshness of the cheese is perfect with the sweetness of the blueberries. Also, just a splash of cassis is needed in the relish & using the real vanilla bean is well, just sublime! Enjoy!

I made just the basic blueberry pancake without the lemon zest and these were the best pancakes I've ever tasted!
However, this recipe doesn't yield twenty. I only got about nine (5 inch diameter pancakes from it. My boyfriend and I managed to scarf down the whole batch! If you're making these for a family of four, you should definitely double the recipe.

if the kids like it, then it's a winner and they liked these delicious pancakes. i didn't have lemon zest or ricotta but they were still great without them, next time i will make sure and have all ingredients. i'm sure they are even better with the missing ingredients!
