    This Mac and Cheese has become a Thanksgiving tradition in our family! It is time consuming but the end result is worth it!!!

    The best mac and cheese receipe out there!!! I use a ham steak -vs.- pancetta. As mentioned lots of prep but so worth the effort!

    We love this mac and cheese! Lots of prep but definitely worth it. If you are serving this with something else (soup/salad/protein it will easily make 8-10 servings.

    This was absolutely the best mac and cheese I have ever eaten. My wife and I have tried a half dozen other recipes from this site from well known names, but none can compare to this.

    I'd caution you that the time the recipe says it takes to make must assume you have all the ingredients prepped. If you start the clock when you haven't already done all the chopping, grating, whisking, and measuring... trust me... double the time to 2 hours. Still, at 2 hours this is without a doubt worth it!

    P.S. this is excellent reheated in the toaster oven! Doesn't turn to mush-

    I didn't think this recipe was anything special, honestly. I've made multiple different kinds of homemade mac and cheese, and this is most definitely at the bottom of the list of top mac and cheese recipes.

    The cheese, itself, was hard to find and ridiculously expensive. And, the cheese is about all the flavoring you taste in the dish. To me, it was a little bland. I wouldn't suggest it to anybody, and I'm taking it out of my recipe box.

    I found this recipe in my Food network magazine. I saw all the cheese and was not sure if I should try because if the $$$$$; however, I took this as an opportunity to finally cook with some ingredient’s that are more gourmet and specialty. I only used half the cheese and froze the rest. I made this Mac and Cheese for my two year old- she liked it. I froze the rest hopefully it holds up.
    I did substituent a little- instead of whole milk I used 4 cups of whipping cream (the recipe I had called for 5 cups of whole milk. After I took the liquids of the stove, I put them in my food processor just to give it an extra mix. I also put more cayenne and added some cumin to the sauce. I added some shredded mozzarella. I could not find the white Irish cheddar cheese the recipe called for- so that cheese was not present.
    Even though it was expensive to make, I did learn some important lessons about making mac and cheese and being able to add, substitute and take away. Thanks Bobby
