The key to this recipe was the Sherry vinegar. If you are like me and have a hard time finding Sherry vinegar at your local mart - you will have to build it on the fly. I mixed 1 part Sherry to 1 part Distilled Vinegar and the resultant Vinaigrette came out great. This dish is a great companion to the Rum Glazed Filet of Beef, especially when the potatoes start sucking up the Rum Glaze themselves. Delicious.
