I get not wanting the cost of spices, but think you're missing out a little by cheating with Old Bay seasoning. The only spice I didn't have was mace, and while I'm not sure what else I'll ever do with it, these were simply the best steak fries I've ever had.

Great flavor but used spices sparingly as to not overwhelm the potatoes. Nice change on fries.

10+ years ago, a similar potatoe recipe was on local PBS tv stations featuring Ming Tsai while he was in San Francisco. Bobby is reminding us of how a mixture of herbs/spices make potatoes take on new tastes beyond baked, whipped and fries. Thanks Bobby.

When I watched the show Bobby said just use any of your spices. So we just use a lot of everything. Each time we make them they are a little different. One of our household favorites.

These were really easy and really tasty. I didn't want to spend $20 in spices...so I just bought a jar of Old Bay seasoning in the spice aisle at the grocery. It worked out just fine. We let them grill for about 8 minutes though. 3-5 minutes just doesn't cut it. Overall, these made a yummy side dish.

I just skipped making the spice mixture and used Old Bay seasoning. Was a snap to throw this together then.

I appreciate this recipe more for showing me what spice combo to use to duplicate that used in Old Bay seasoning! It really does taste the same and now I can tweak it a bit to suit it more to my own taste.

Great job Bobby and/or Food Network's food chemistry lab that decoded this spice blend!
