    I'm always looking for flavorful vegetarian dishes - occasionally being veggie gets boring and I have to be careful not to revert to carb-heavy foods. A local restaurant does an excellent treatment of acorn squash with fruit juice, raisins, spinach, wild rice, etc. and I was looking for similar recipe. I think this is fantastic on its own but has lots of potential with some delicious fillings like walnuts, greens, dried cranberries, etc. Can be an excellent main course, not just a side. Another vote of confidence - my Peruvian boyfriend tells me this tastes like the pumpkin his grandmother used to make. He wants me to make it more often!

    We eat a variety of squash regularly and grill outdoors several times per week so this recipe works great for us. I did use splenda instead of the brown sugar but still found a perfect side for any dish. Used my toaster oven and was impressed with how tender and moist the squash was. Amazing pairing of flavors. Quick and easy with so many compliments...I will be making this one quite a bit from here on out. Thank you Bobby for the new addition to my recipe box!

    Made this yesterday for Thanks Giving. It was the hit of the meal. None of us really eat squash....or should I say "used to eat squash". That changed yesterday. I have no idea what people are talking about when they say it had not flavor. Thanks Bobby!

    2 comments: Bobby on the show cooks the squash at 400, not 350 as in the written recipe.

    The squash still has a very "squashy" almost chalky taste. The aroma is really good--OJ and cinnamon together with the brown sugar made my 5 year old hungry, but the taste just was not there. I may try it once more at the correct temperature and see, but disappointing.

    Acorn squash are inexpensive and something a lot of people have never eaten. This recipe is an easy way to impress.

    Pleasantly surprized to have such an
    easy and versatile way of making such a
    great tangy test to this squash. I will
    make it every 2 weeks from now on.I did
    also add a very lean sausage to go with
    it + our favorite lemony green beans &
    almonds... It is so goooooood, try it!

    This one was a suprise hit for Thanksgiving this year. I wasn't too sure about experimenting with this but it turned out awesome and people were telling me it was their favorite. Way easy!
