Oven Roasted Wild Mushrooms with Garlic and Thyme

Ingredients
  • 1/4 pound oyster mushrooms, cleaned
  • 1/4 pound hen of the woods, cleaned
  • 1/4 pound shiitake mushrooms, cleaned and halved
  • 1/4 pound cremini mushrooms, cleaned and halved
  • 4 cloves garlic, thinly sliced
  • 1/4 cup olive oil
  • Salt and freshly ground pepper
  • 6 sprigs fresh thyme
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon chopped fresh thyme leaves
Directions

Preheat oven to 375 degrees F.

Combine the mushrooms and garlic in a large roasting pan, add the olive oil, and pepper and stir to combine. Add the sprigs of thyme and roast in the oven until golden brown and all of the liquid has evaporated, 25 to 30 minutes, stirring occasionally. Remove from the oven and stir in the Worcestershire, salt, and chopped thyme.

    Tasty and easy to make. We couldn't find Hen of the Woods mushrooms and just substituted another type we could find at Whole Foods. Worked fine.

    I found this recipe under 'vegetarian', but worchestershire is not vegetarian because it contains anchovies. You may want to find an alternative ingredient if you're cooking for a strict vegetarian.
    whoever puts the recipes up here doesn't report actually. i just watched the show and he said to cook the mushrooms at 350 for 20-25 minutes. this happened on two tyler florence recipes also.
    Just a comment...this recipe doesnt tell you when to add the garlic. FYI :) Love ya Bobby!
    Easy and very good but think I would add less Worcestershire sauce next time.
    I have made this recipe so many times. I have served it with roast beef, steak and even lamb. It's wonderful and so esy to make.
    These mushrooms were absolutely wonderful- I'll use this dish again and again. I'd chop them larger next time and roast them closer to 20 minutes next time. A hit!
