Really tasty. Very quick and easy to prepare. Use half the amount of pancetta, seems this probably is a misprint, can't imagine using half a lb of pancetta. I also used half of the rendering prior to putting the peas, shallots and chili flakes in the pot. I prepared the pancetta first and set it aside while I cooked everything else, since the peas only takes a few minutes to heat up and get her on the plate.

I made this for Christmas dinner and it was really good and quite easy to make. Lots of flavor. A great recipe to enhance peas.

0.5 lbs is too much pancetta as I found it was too salty. I would use 1/3 at most probably 1/4 of what the recipe calls for. I liked the concept but maybe my palate isn't sophisticated enough for pancetta (I think my next go round would be to use peas with thick cut bacon instead. I liked the thinly sliced shallots and hot peppers but on my next iteration, I will try chopping the shallot just to try it out.

This was delicious! I made it last night and it was a hit in our house - even our boys ( 4 and 6 years old loved it! I felt it was a little too salty with the amount of pancetta the recipe calls for so I will make with 1/2 that much next time. I am so excited to have found a yummy recipe for making peas!

Made this for the first time to add to Thanksgiving table and it was amazing, fast and easy. Had to leave out the red pepper flakes for the kids sake, but will add if serving to adults. It is really outstanding and it comes together so fast (pre-chop everything the day before that it can easily go from stovetop to table in minutes keeping it away from the oven (rewarming to compete with turkey-time. Love it.

So very simple to put together & visually pleasant this made a wonderful side for our Thanksgiving meal. Perfect balance of salty and sweet. I skipped the red pepper flakes in deference to guests and although I will try it with next time, I'm hard pressed to see a reason for them. Five stars & a big thanks to you Bobby.
