I made this Prime Rib for our Christmas Eve dinner and it was a hit! I had always been afraid to make it at home for fear it was to 'high tech', it could only be done at my favorite restaurant. Boy, was I surprised! The flavor was excellent, the thyme is what sets it off! I thought I would have enough for leftover hash for breakfast but my husband and son beat me to it! Thanks,Bobby, for such a great recipe. Now we can stay home and save money and not give up good flavor!

My whole family raved about it. I cooked it a little longer, 15 minutes, 'cause some people liked it medium.

I slow roasted the prime rib for 6 hours at 200 degrees rather than following the cooking instructions provided. The roast was evenly cooked and perfect from start to finish.

This recipe rocked my Christmas! It took 3 hrs to cook my 8.12 lb Prime Rib Roast. I used a Huckleberry wine for the Au Jus and it was superb. Took the roast out of the oven when the temperature reached 138 - - perfection! Thanks Bobby Flay!
