I didnt expect the prepwork would be so long. There was way to many peppers and veggies. My ketschup and balsamic vinegar topping burnt in the oven. But once I scraped all the burnt layer off it was really good. I'll be willing to try it again but maybe next time I will modifiy some of the ingredients and use about half of the veggies. And 86 the Balsamic vinegar. If you have any suggestions on what I did wrong and what I can do to fix it please let me know. melliy1alv@yahoo.com my email address.

This is the best meatloaf ever, the flavor amazing. All the ingredients just hit you all at one time. My family love it... I usually have leftovers, but not this time, they couldn't get enough. My children love it, to the point they were scraping the pan. Thanks Bobby, for this amazing recipes.... You are now my number one CHEF!!!

I cook often for my large extended family and this meat loaf is a new family favorite. My husband and I were watching the Bobby Flay episode one day and we both looked at eachother after this meat loaf came out of the oven and said we had to try to make it. It did not dissappoint us! This truly is the BEST meat loaf I have ever tasted. The recipe is simple and the flavor just is simply incredible. It is truly a wonderful dish and so fresh tasting with all of the vegetables in it. YOU MUST TRY THIS MEAT LOAF!!!!!

As we're watching our carbs we dared to make some adjustments to this fabulous recipe. Substituted 7 Wasa crackers for panko breadcrumbs, threw in some chopped jalapenos to veggie mixture and used, believe it or not, half Heinz sugar free ketchup and half Suzanne Somers sugar free Chipotle sauce in the loaf and for the glaze.
Absolutley the best meatloaf we have ever had....not to be missed!!!!

Wow! My mouth was watering when I was watching this episode so I just had to make it! The glaze offered lots of flavor (and I don't usually use ketchup to top my meatloaf. This recipe will certainly be put to good use! Thanks Bobby!!

prep work was long, the balsamic burned for me too as pp said.. the texture was wonderful though.. i just wish it had more taste.. i might try this again with another glaze and follow cook's illustrated spices instead..

I'm not a big fan of meatloaf, but I can't get enough of this one!! This was the first Bobby Flay recipe I tried and I instantly became fan.
I started making burger size loafs and grilling them!!

My husband loves meatloaf and when we saw Throwdown we couldn't understand how Bobby lost as the recipe looked fantastic. I am not a fan of meatloaf and I have tried most traditional recipes. Well I have convert to the Bobby Flay way!! This was excellent. My husband and I had to make ourselves stop eating this. I did make a brown gravy from scratch with some of the drippings to go with this and the mashed potatoes. I added some of the left over balsamic/ketchup mixture to the gravy and it was fabulous!!

My whole family loved this, including my 1 & 5 year olds. The glaze was a bit too tangy so I will reduce the vinegar next time, but otherwise this is a perfect, moist and delicious meatloaf that we will be making again and again!
