I watched Bobby make this at one of his Throwdown episodes and wanted to give it a try. I'm glad I did. I love balsamic vinegar and it really made this meatloaf recipe yummy. Best I've had. Enjoyed having different ground meat in the recipe too!

i made this for my boyfriend and my mom for dinner and they loved it! it was light and fluffy and full of yummy veggies which my mom loved because she watches what she eats and my boyfriend couldnt get enough! later that night i found my dad eating the left overs straight out of the fridge!! basically it was gone by the morning :

the only thing i changed was at the end when the recipe tells u to combine the last cup of ketchup and balsamic vinegar to make the glaze i only put 1/4 cup of the balsamic into the 1 cup of ketchup so the glaze was still thick, tasted delicious and cooked up nice and crisp

I wanted to make a true American dish for my European friends. I decided on Bobby's meatloaf. An instant hit and so easy to make!

Thanks Chef Flay for a different spin on an otherwise basic dish. You can cut down on the veg's and the 1/2 cup of ketchup if you want to firm it up, but I thought it was perfect. I'm going to go to Hyannis to try out the dish that beat this one. Can't believe it.

I watched the show and couldn't wait for the recipe to be posted so I could try it. I love that vegetables are used in the meatloaf, even though it took longer to make. My husband has not stopped raving about this dish so I will definitely be adding it to our favorite dishes list!

This is the best meatloaf ever. My husbands' grand mother used to be the best meatloaf cook in the family but after cooking the meatloaf by Bobby Flays' recipe I hold the title:

    Throwdown ROCKS

Really I have never been a huge fan of meatloaf, but wow!! This one hits all the flavor notes and surprises with the amazing vegetable texture. Hubby and all my friends raved!! Can't take the credit, another hit from Bobby!! P.S. try the peas and pancetta. This ain't your mommas meatloaf, IT'S BETTER....

the yellow and red peppers really overtook the flavor of the meatloaf and made it too loose. about 1/2 of what's required is truly needed. the glaze is great though, and Katrina's right. you only need about 1/2 of what's specified.
