    I thought that Tyler's "ultimate" meatloaf could not be beat, but Bobby Flay's balsamic vinegar glaze give this one the advantage. Oh! And the pepper flakes give just enough hit to (forgive me, Emeril kick this one up another notch. Thanks.

    The combination of the vegetables really adds to the meatloaf. The thyme really comes through in the dish too, and the glaze really makes the dish better than just plain ketchup would.

    I saw this episode and it looked really good! I made it today and I have to say I loved it!! I dont make good meatloaf and I don't normally even like it but this was out of this world! I'll make it again and again!

    This meatloaf is fantastic.The flavors
    all meld together.This recipe makes
    enough leftovers for 2 days. The aromas
    from this cooking-I could still smell
    the next day. Bobby hit a home run
    in our house with great food.

    My husband is very hard to please and we've never found a good meatloaf recipe that he really liked UNTIL NOW! I agree with the other reviewer about the 350. I cooked at 350 for 1.5 hours. Another variation I did is that the recipe called for 1 red and 1 yellow pepper. This made about 2 cups diced for me. I only used 1 cup of the peppers, and added 1 cup of minced onion.
    I loved the taste and texture of all the vegetables in the meatload, and felt I was eating healthier than with traditional meatloaf.
    I used ground round instead of chuck for less fat.
    We will definitely keep this one as our family favorite meatloaf!

    I have never been a meatloaf fan. I have tried many different recipes but i thought i would try one more and i sure am glad i did. This was so moist and delicious with all the vegetables and i love that one of my favorite ingredients is in the recipe, balsamic vinegar. I could not find the chipotle puree though so i made traditional mashed potatoes. I now love what i never have before, this is a keeper.

    One note: On the show, Bobby set the oven to 350 degrees. In the instructions it says 425. We did the 350 and it turned out wonderfully. Very tasty and moist. Great twist on regular meatloaf.
