Great recipe! A must for cheese lovers... If you dont like Goat cheese, replace it with something else.. The sause is fantastic!!

First, let me start by saying I LOVE goat cheese! The flavor of this recipe was good, but it just seemed to be missing something. Next time I think I'll add some meat to the filling, and it will be just right. Otherwise, you have some tortilla and cheese - not much of a satisfying meal.

This is a great recipe. The smooth, creamy taste and texture is beautiful with the rich tart flavor of the red sauce. It is also fantastic with chicken. Also, if you are not familiar with simple ingredients and don't know how to cook them, read these reviews before you cook. (or ask a friend

Disregard the low ratings here... The people that rated this recipe low don't like goat cheese! Come on people, I don't care much for pickles so I don't make a point of trying then rating a recipe poorly because I don't like the predominant ingredient!
I like this how it is here but I've made this several other ways ways, added leftover roasted and shredded turkey (or chicken along with black beans. You can also mellow out the goat cheese by substituting some of it with cream cheese.
The sauce is a keeper for sure and could be used for any enchilada recipe!

If you don't like goat cheese, why make "goat cheese enchiladas"? And then you complain about the recipe? Huh? Anyway...if you like goat cheese, you'll enjoy this recipe.

The recipe is very good, but being from San Antonio I know that we would never use Blue Corn Tortillas for these classic Mexican Enchiladas. The sauce is excellent

I'm not a big cheese eater, and wasn't sure of what goat cheese tasted like. I tried it anyway and it turned out horrible. Very sour/salty and too much cheese. My daughter refused to eat it and I couldn't even finish one. It also turned out a little mushy from the moisture from the cheese. Try a diff. recipe.

I thought the best part of this recipe is the sauce. I loved the sauce it was a bit too mild for me so I added a few extra chiles. But I did not like the goat cheese part of the recipe. I would use half goat cheese and a less salty cheese like jack cheese or just straight jack cheese with the pep. cheese.OR perhaps add some chopped spinach to the cheese to break it up..

The sauce was absolutely delicious! I sprung this concotion on my friends at a dinner party, who would normally cringe if I said "goat cheese" but I didn't tell them what it was, and they all loved it. I made the sauce and filling a day a head of time, but unfortunately, I also put it all together a few hours before everyone showed up, and it made the tortillas soggy, so don't prepare until the last minute.
All the flavors worked wonderfully together, and I would certainly make it again.
