    To the flour, add a little cayenne and a little parmesan cheese. You'll notice the added flavor. Quick and easy recipe that can be used for any pan fish.

    I made this recipe exactly as written. It's not nearly as good if you substitute oil for the butter. This is the perfect way to cook fresh lake perch! Tender, tasty, with just the right amount of crunch. Note: Make sure not to overcook!

    I used this in conjunction with another recipe, Lake Victoria Perch Veracruz. The family loved it! (took a week to get the fish smell out of the house though!

    Instead of getting your fingertips coated in batter...shake things up in a sealed Ziploc bag.
    Great, no fuss recipe. Saute in oil for a lighter choice...great grilled on the BBQ as well.

    Tried this receipe and was very pleased with it. I mixed the dry ingredents in glad bag. Once I dipped the fish, it added them to the glad bag, sealed, and lightly shaked.
